What's your favourite Black Cow cocktail?
The Pernelle stands out for me. It's not just about its drinkability. The pleasant floral and citrus hints combined with a tinge of dryness make it the perfect match for seafood - especially our locally hand-dived scallops.

What's your favourite thing about Lyme Regis?
My favourite thing about Lyme Regis is getting to live with my family in such a beautiful location. My son loves the sea! The emerging local food scene is also fantastic with many local restaurants and bars being inspired by the Dorset coastline and incredible produce, both from the land and the sea.

What's on the horizon for Tom’s?
Every day at Tom’s brings a new opportunity to elevate our offerings. With the festive season fast approaching, we're gearing up for an influx of Christmas parties and celebrations. Our aim is constant improvement; today's creations should always surpass yesterday's.

Can you share a bit about Tom's and your inspiration?
My connection with food and drink dates back to my childhood. As a budding young chef, I was always eager to experiment. Over time, my palate has matured, and my style has evolved. Now, I often find that the simplest things offer the most profound pleasures.

How does Black Cow feature in your menu?
Black Cow has been a staple since the very beginning. Its smooth profile is perfect for short concoctions like martinis, lending a rounded taste without any harshness. Moreover, its unique balance of flavours shines even in intricate drinks. Take our Pernelle, for instance; the vodka seamlessly melds various notes, creating a harmonious blend. I would happily enjoy it straight, accompanied by a plate of fresh oysters.
