Serious Hot Chocolate

Makes six

Willie’s 100% cacao*, 90g

(Ones with fruity notes like Chulucanas or Sambirano work particularly well)

Black Cow vodka,150ml 

Raw cane sugar, 70g

Hot water, 300ml

*Alternatively use 130g of Willie’s 70% dark chocolate and reduce the sugar to 30g

Step by step

Roughly chop the cacao or chocolate into a saucepan and add freshly boiled water and sugar.

On a medium heat, bring it back so it is just on the point of boiling, whisking to get a froth.

Remove from the heat and pour in the vodka, whisking briefly.

Pour into your cups, dust with grated chocolate, and serve
