Rhubarb & Strawberry Bellini


Black Cow & English Strawberries, 25ml
Fresh Rhubarb, 300g
Sugar, 75g
Bottle of English Sparkling Wine
Makes six Bellinis 

Step by Step

First make the Rhubarb puree. Heat the rhubarb with the sugar in a small pan on a medium heat with a couple of tablespoons of water. 
Cook for a couple of minutes with the lid on, then simmer for a few minutes with the lid off until you get a soft Rhubarb compote. 
Blend with a stick blender until you have a smooth puree. Set aside to cool.
Spoon into six flutes. Add the Black Cow & English Strawberries vodka.
Top with English Sparkling wine and garnish with a fresh strawberry.
