Black Cow vodka,  50ml 
Passion fruit liqueur,  15ml
Passion fruit puree,  25ml
Lime juice, freshly squeezed,  15ml 
Vanilla simple syrup,  15ml
Sparkling wine, chilled,  60ml 
Garnish: ½ a passion fruit

Add all ingredients except sparkling wine into a shaker with ice and shake vigorously until the cocktail shaker becomes cold.

Strain into a chilled coupe glass.

Float half a passion fruit on top of the cocktail

Serve with a sparkling wine sidecar (on the side).
