Coming in off the bustling straights of Lyme Regis for respite on a hot summer's day, Lilac is immediately cool and calm, a haven for food and drink lovers. With our shared zero waste ethos, it's a joy to see how Harriet and the Lilac team spotlight seasonal veg, locally sourced Dorset produce and transform ingredients that would go to waste into delectable dishes.

During our visit, we were treated to three exquisite Black Cow cocktail specials. Our afternoon was made even more memorable as we sampled Francisco's creations and delved into the sources of his inspiration.

Tell us a bit about Lilac and the inspiration behind your drinks menu.
Lilac is a beautiful place where you feel very comfortable. We offer unique natural wines which you can only drink at Lilac in Lyme Regis, and of course, the food is delicious! A lot of my inspiration comes from the kitchen, which provides most of the ingredients for my cocktails. I love incorporating foraged elements. My cocktail concept is built on zero waste, seasonality, and foraging—paralleling the kitchen's ethos. Often, they hand me ingredients they no longer need, and I craft a cocktail from them.

Why do you like using Black Cow in your drinks?
I prefer using Black Cow because it's incredibly smooth and versatile. It easily pairs with any ingredient I want to highlight. The best part? It complements without overshadowing the flavours.

Favourite thing to do in Lyme Regis?
Nature walks with my kids.

Advice for making cocktails at home?
My main tip is this: don't be afraid to mix, even if a combination sounds odd. You'll never truly know a flavour until you try.

What’s next for you and Lilac?

I'll continue prioritising seasonality in ingredients. Perhaps we'll introduce warmer cocktails, but the core concept will remain consistent.
