Mushroom-Tini

Ingredients

Black Cow, 50ml
Dry Vermouth, 25ml
Olive brine, dash
Dried porcini mushrooms, 2 pieces
Sprig of thyme 
Pinch of salt

 

Step by step

Pour hot water over the porcini mushrooms and leave to infuse.
Muddle the porcini mushrooms with the vodka and a pinch of salt in a shaker.

Fill the cocktail shaker with ice cubes.

Add olive brine, a dash of the porcini mushroom water and the vermouth, shake vigorously for 10 to 15 seconds.

Double strain into a chilled martini glass.

Garnish with a sprig of thyme

Serve immediately
