Going first at a cocktail competition is never easy but Tom from Drakes in Brighton, did an excellent job.

Tom, said: "The theme of representing a significant moment in one’s life is a difficult thing but I have attempted to do this, both aesthetically and in the method of the drink. I chose to exemplify the first time I ever saw a shooting star, I was on a ship in the middle of the Mediterranean Sea and it was a numinous experience to say the least.

"I have shown this here in the garnish, that represents a star and black edible paint representing the nights’ sky. I wanted to do something a little sci-fi like and interesting to try and illicit some sense of intrigue, so I based the method of the drink around flash infusing which I hope is impressive (plus when you depressurise the dispenser it sounds like the doors on the death star when they open)."

The Gold Top Cup judges, said: "From his choice of ingredients through to the wonderful garnish, Tom's drink was arguably the most ambitious one we saw at the final. Yet he realised that ambition brilliantly. Unusual, slightly odd flavour combinations were perfectly married and balanced. He's definitely on our one-to-watch list.”

75ml Black Cow vodka
20ml homemade organic cocoa nib
Vanilla and toasted hazelnut 1:1 syrup
5 drops of Regency juniper and apricot bitters
3 sprigs of rosemary
